Sugar-free Quesadilla Salvadoreña
A savory sweet bread made with rice flour, eggs, and Cotija cheese, topped with sesame seeds.
Ingredients
- 1cupRice Flour
- 1tspBaking Powder
- 1cupSweet Bean Granulated Sweetener
- 3wholeEggs (separated)
- 0.5cupButter (melted)
- 4ozCotija Cheese (finely grated)
- 0.75cupCrema Salvadoreña
- 1TbsSesame Seeds
Instructions
Preheat oven to 340 degrees F (175 degrees C).
Beat egg whites in a bowl until firm (no stiff peaks).
Combine sweetener and butter in a large bowl and beat with an electric mixer on high speed until creamy. Mix in egg yolks, one at a time, until well blended. Gradually mix in the cotija cheese. Mix in Crema Salvadoreña and baking powder and beat until batter is smooth.
Sift rice flour over batter and fold in with a spatula. Fold in the beaten egg whites a scoop at a time with the spatula.
Pour batter into a lightly greased 9x13-inch glass baking dish. Sprinkle sesame seeds on top.
Bake in the preheated oven until golden brown on top and a toothpick inserted into the center comes out clean, about 34 minutes.
