No Sugar Added Peach Dessert
Layers of nutty crust, silky cream cheese filling, and fresh peach topping — a stunning summer dessert with no added sugar.
Ingredients
Crust
- ⅔cupalmond flour
- ⅓cuppecans
- ¼cupSweet Bean Sweetener (powdered)
- ¼cupbutter (melted)
Peach Filling
- 5–6large ripe peaches (peeled and diced)
- 1small pkgsugar-free orange Jell-O
- 1cupSweet Bean Granulated Sweetener
- 2cupswater
- 2Tbscornstarch
Cream Filling
- 8ozcream cheese (softened)
- ½cupSweet Bean Sweetener (powdered)
- ½Tbsvanilla
- 1½cupsheavy whipping cream
- ⅓cupsour cream
- 1tbspsugar-free vanilla pudding mix
- 1½Tbscornstarch
Instructions
Crust: Mix almond flour, pecans, and sweetener. Add melted butter and mix until consistent. Press into the bottom of a 9×13 pan. Bake at 325°F for 7 minutes. Cool completely.
Peach filling: Combine sweetener, water, and cornstarch in a saucepan and boil until clear. Remove from heat, stir in Jell-O until fully dissolved. Cool over ice until slightly thickened, then fold in peaches.
Cream filling: Beat cream cheese until smooth. Add powdered sweetener and vanilla; beat until combined.
In a separate bowl, combine cornstarch and pudding mix. Whip cream until it starts to thicken. Add sour cream and the cornstarch mixture; whip until thick and stiff.
Fold whipped cream into cream cheese mixture a spoonful at a time until fully blended.
Assembly: Spread half the cream filling over the crust. Spoon all peach filling evenly over the cream layer. Top with remaining cream filling.
Refrigerate overnight to set. Serve cold.
