Griddle Breakfast Burritos
Sausage, bacon, eggs, and green chiles all rolled into a warm tortilla. The kind of breakfast that makes mornings worth it.
Ingredients
- ¾lbground sausage (or sausage links)
- ¾lbbacon
- 12–15large eggs (beaten with salt and pepper)
- 8ozgrated cheese
- 1onion (diced)
- 1cancanned diced green chiles
- avocado oil
- 1pkglarge flour tortillas
Instructions
Coat the griddle surface with a small amount of oil. Cook bacon and sausage on the griddle, breaking into small pieces. When the meat is almost done, use a couple tablespoons of grease to cook the diced onion until translucent. Add the green chiles, cook 1–2 minutes, and then mix with the bacon and sausage. Set aside.
Using some leftover grease, pour the eggs onto the griddle and reduce heat below them. Fold as they cook. When the eggs are almost done, mix in the bacon/sausage mixture and finish cooking. Sprinkle cheese on top and let melt.
Warm up the tortillas, either on the griddle or in the microwave. Fill each tortilla, fold two opposite sides in, and roll up so the folded sides become the ends. Top with hot sauce, if desired.
