Tasty Bean Dip

Ingredients

  • 2cuprefried beans (freshly made or canned)
  • 1fresh jalapeño (finely chopped, add more for spicier dip)
  • 2clovegarlic (minced)
  • 1Tbsolive or avocado oil
  • ½tsppaprika
  • ¼tspcayenne pepper
  • ¼tspcumin
  • 1tsponion powder
  • 8ozcream cheese (1 block, softened)
  • 6ozsour cream
  • 1cupgrated cheese (Monterey jack, colby jack, or pepper jack)
  • salt (to taste)
  • 3Tbsgreen onion (chopped, for topping)
  • 1diced tomato (for topping)

Instructions

Preheat oven to 350°F.

Heat avocado oil in a small pan over medium heat. Cook jalapeños 1–2 minutes. Add garlic and cook until fragrant. Remove from heat.

Heat refried beans in a saucepan until hot. Stir in paprika, cayenne pepper, cumin, onion powder, salt, and jalapeño/garlic mixture. Add cream cheese in small squares and stir until melted. Stir in sour cream.

Transfer to an 8×8 or 9×9 oven-safe pan. Bake 15–20 minutes. Top with grated cheese and bake until melted.

Cool 15 minutes. Top with green onions and tomatoes. Serve with tortilla chips.
